FRESH ISH SALSA

One of my favorite summer time condiments is salsa! Cut up some bell peppers and cucumber and you are all set for a healthy snack on the beach or by the pool. Salsa is low in fat and full of vitamins like lycopene. Lycopene is packed with antioxidant properties that can help with everything from preventing certain cancers to benefiting heart health. It's also hydrating which is perfect for those hot summer days!
This salsa recipe is a FAMILY FAVORITE and one of the recipes that I am asked to make over and over.
INGREDIENTS:
2 cans Rotel (I like cilantro & lime)
1 21oz can Roasted or Regular Diced Tomatoes
1 Jalapeño, seeded
1 Lime, juiced
1/2 Red Onion, Peeled
2 Cloves Garlic, Peeled
Salt & Pepper to taste
1t Cumin
1T Sugar
1 Bunch of Fresh Cilantro, stems removed, to taste (optional)
Place all ingredients in a food processor. Blend. Enjoy. I love to have salsa with fresh veggies like bell peppers, blue corn chips or on top of a Mexican rice bowl!
