Ground Chicken Four Ways

We LOVE ground chicken! it's easy, it's lean, and it's so versatile. I use a 90% lean ground chicken I get from Costco here in Japan. For these four recipes I divided the chicken into four one pound segments. The bag I get is a massive four pound bag!!!
Here are four of my most recent favorites.
Greek Chicken Bowl
Unstuffed Pepper Bowl
Honey Sriracha Chicken
Firecracker Chicken Bowl
Let's start with the most simple. The Greek Chicken Bowl was a piece of cake.
Greek Chicken Bowl

Ingredients:
Chicken
1T Avocado Oil
1 lb Ground Chicken
2T Greek Seasoning
Add 1T avocado oil to a pan and cooked the ground chicken. I added a greek seasoning blend to the chicken and mix. Don't have a greek mix? Try this one.
Set the Chicken aside.
Greek Salad
1c Diced Tomatoes
1 Diced English or Japanese Cucumber
1/2 Chopped Red Onion
1/4c Kalamata Olives
1/4c Feta Cheese
Combined all diced veggies and crumble the cheese. Set aside.
Greek Yogurt Dip
1c Non Fat Greek Yogurt
1t Minced Garlic
1T Lemon Juice
4T Greek Seasoning
1 Finely Chopped English or Japanese Cucumber
Place greek yogurt into a bowl. Add all ingredients and stir.
You can use regular steamed rice, brown rice, cauliflower rice or no rice. Place into a bowl and top with chicken, greek salad and greek yogurt dip.
Unstuffed Pepper Bowl

Ingredients:
Chicken
1T Avocado Oil
1 lb Ground Chicken
1 can Diced Tomatoes (drained)
1t Chili Powder
1t Cumin
Salt & Pepper to taste
Unstuffed Pepper
3-4 Sliced Bell Peppers
1 Sliced Yellow Onion
1T Garlic
1T Avocado Oil
Place oil and garlic into a pan and cook until golden. Add peppers and onions into the pan and toss in garlic and oil. Turn down the heat, cover and cook peppers to desired doneness. I like mine a little crunchy. Remove from heat and set aside.
Add 1T of avocado oil to pan. Add chicken and seasoning. Brown. Add drained diced tomatoes and cook until heated thoroughly.
You can use regular steamed rice, brown rice, cauliflower rice or no rice. Place into a bowl and top with chicken and veggies.
Honey Sriracha Chicken

Ingredients:
Chicken
1T Avocado Oil
1 lb Ground Chicken
Honey Sriracha Sauce
1/4 c Sweet Chili Sauce
1T Sriracha
2T Honey
2T Soy Sauce (Liquid Aminos are GF)
1T Garlic Powder
1t Ground Ginger
Green Beans
1 Pkg Steamed Green Beans
2T Toasted Sesame Seeds
Place oil and garlic into a pan and cook until golden. In a separate container mix all ingredients for the Honey Sriracha sauce and pour over the cooked chicken. Mix and remove from heat.
Cook the green beans according to the package and top with sesame seeds.
You can use regular steamed rice, brown rice, cauliflower rice or no rice. Place into a bowl and top chicken with veggies.
Firecracker Chicken Bowl

Ingredients:
Chicken
1T Avocado Oil
1 lb Ground Chicken
2c Sliced Mushrooms (optional)
Firecracker Sauce
1/4c Splenda or Swerve Brown Sugar
1/4c Buffalo Sauce
2T Apple Cider Vinegar
1t Minced Ginger
1t Minced Garlic
Place oil and garlic into a pan and cook until golden. In a separate container mix all ingredients for the Firecracker sauce and pour over the cooked chicken. Mix until cooked through and remove from heat.
I used Broccoli as my vegetable but you can use anything you like. Make it easy and use steammable veggies from the freezer section!
You can use regular steamed rice, brown rice, cauliflower rice or no rice. Place into a bowl and top with chicken and veggies.
