Mexican Stuffed Peppers

These are so easy and so good! You can easily tailor the macros to fit your personal needs but this is just an outline. For those of you who have enjoyed my cooking I’m a little more “a little of this and a little of that” as opposed to exact measurements!
What you need:
Cookie sheet
Parchment paper
Knife
Saucepan
Ingredients:
4 Bell Peppers
1kg ground chicken
A jar of salsa
Cojita Cheese
GF Taco seasoning
Directions:
Preheat oven to 375
Cook ground chicken
Add taco seasoning.
Add salsa and stir.
let simmer.
Cut peppers in half long ways. Scoop out seeds and rinse. Place on cookie sheet cut side up. Scoop chicken mixture into peppers (100g each) and top with cheese. Place in oven and cook until cheese is melted and peppers are soft.
