Salmon Rice & Asparagus Meal Prep

I love a good hearty meal prep. This is definitely SIMPLE, macro friendly and delicious!


Ready in less than 30 minutes here's what you need 👇🏻


Ingredients

Salmon Filets

Lemon

Garlic

Avocado or Olive Oil

S&P

Asparagus

Rice

Cauliflower Rice


Preheat oven to 375

Line cookie sheet with parchment paper

Trim ends of asparagus

Place salmon & Asparagus on cookie sheet

Squeeze lemon over salmon

Lightly spray asparagus with oil

Salt & pepper to taste.

Add minced garlic to salmon & asparagus


Place in oven and cook until salmon flakes


Steam rice in microwave or rice cooker

I almost always use microwave rice bc I hate extra dishes and I’m usually always short on time.  Brown or white rice….it’s really a personal preference.


Measure out rice into containers according to your personal macros.  Then top with asparagus and measured salmon.  Store these for up to 4-5 days in the fridge.
