10 Macro Friendly Sheet Pan Dinners

Taking care of yourself does not have to mean spending HOURS in the kitchen cooking to turn around and spend an hour cleaning it up! These recipes combine a few of my favorite things:
They are all macro friendly meaning you can adjust each ingredient to fit your personal nutrient needs which also mean NO GUESSING what's in the casserole!
You literally throw it all on a pan, turn the oven on and throw some seasonings on. THAT'S IT!!!
Clean up is SIMPLE and QUICK! Bonus tip: Use parchment paper for EVERY THING! It makes cleaning up so much faster. Some days I would rather throw a dish in the trash than spend time scrubbing it in the sink!
When it comes to eating healthy it doesn't need to be complicated or time consuming!
When we are talking about macros, specifically, we are talking about carbs, fats & proteins. The best thing about these sheet pan meals is you can pick one of each and toss it on the pan and you are good to go! So let's dig in!
For all of these recipes preheat oven to 400. Line sheet pan with parchment paper. Cut meat and veggies into no more than 1 inch pieces for even cooking.
Sausage Broccoli and Potatoes
1 package of chicken sausage (any flavor)
1 package of Birds Eye Roasted Red Potato Blend
1 package frozen broccoli florets or a bunch of fresh broccoli
Cover lightly with Olive or Avocado oil Spray
Salt & Pepper to taste
Place in the oven until vegetables are cooked through.
Fajitas
Meat of your choice (steak, chicken, shrimp) cut into strips
Onions and Peppers (I use bell peppers and jalapeños) cut into strips
Spray lightly with avocado or olive oil
Fajita seasoning to your liking
Toss to cover
Bake for 10 minutes then broil for another 2-3 mins on high
Corn or Flour Tortillas
Cook
Serve guacamole, salsa or any of your favorite fajita toppings on the side.
Lemon Chicken with potatoes and zucchini
4 Chicken breast or thighs
1 lb Potatoes cut into 1 inch cubes
2-3 Zucchini cut into 1 inch cubes
2 lemons
Salt
Pepper
Dill, oregano, basil
Garlic
Olive or Avocado Oil
Place chicken, veggies and potatoes on the sheet pan. Lightly spray with oil. Season with dill, oregano, basil salt, pepper and garlic. Toss. Squeeze 1 lemon over pan. Slice 2nd lemon and place on chicken pieces.
Bake 17-22 minutes or until they reach 170-175 degrees.
Salmon Potatoes & Asparagus
Salmon Filet
Potatoes, cubed
Green Beans
Seasoning of Choice
Olive or Avocado Oil
Place Salmon fillets on sheet pan with potatoes and green beans. Lightly spray with oil and season. Cook 10 minutes.
Chicken Green Beans & Sweet Potatoes
Chicken Breast or Thighs
Potatoes, cubed
Green Beans
Salt & Pepper
Olive or Avocado Oil
Place chicken, veggies and potatoes on the sheet pan. Lightly spray with oil. Season with salt & pepper. Cook for 17-22 minutes or until 170-175 internal temp.
Sheet Pan Nachos
Nachos
Cooked Ground Meat of Choice
Taco Seasoning
Shredded Mexican or Cojita Cheese
Black Beans
Place nachos on pan. In a separate bowl combine cooked ground meat & taco seasoning. Sprinkle over nachos. Top with black beans & cheese . Bake until cheese is melted. Top with salsa, sour cream, lettuce, onions, guacamole etc.
Shrimp & Broccoli
Peeled & Deveined Shrimp
Fresh Broccoli
olive or avocado oil
seasoning of your choice
Rinse shrimp and place with broccoli florets on sheet pan. Lightly cover with oil & seasoning. bake until shrimp are no longer clear (about 10-15 minutes). Serve with your choice of carb like steamed rice.
Pork Chops with Sweet Potatoes, Apples and Brussel Sprouts
Pork Chops
Sweet Potatoes, cubed
Brussel Sprouts, halved
Apple, sliced thinly
Avocado or Olive Oil
Salt & Pepper to taste
Cinnamon
Place pork chops on pan with veggies and potatoes. Place apple slices on top of pork chops. season with Salt & pepper and cinnamon. Place in the oven for 17-25 minutes or until pork chops are done and potatoes are soft.
Teriyaki Chicken with Pineapple & Peppers
Chicken breast or Thighs cut into cubes
Pineapple cubed
Bell Peppers, cut into cubes
Teriyaki sauce (I use a Gluten Free one)
Place chicken, pineapple and peppers into a bowl and toss with Teriyaki sauce. Pour onto sheet pan. Cook 15-20 minutes or until chicken is done.
Serve with rice.
Sheet Pan LowCountry Bowl
1lb Shrimp
Sausage
Corn
1lb potatoes cubed
3 ears of corn, wrapped in foil (I like to add a little butter in here)
Creole Seasoning or Old Bay
Olive oil or avocado oil
Place everything except the shrimp onto the sheet pan and season. Spray with oil. Toss. Cook in the oven fro 25 minutes. Take out of the oven and add the shrimp. Cook another 1-12 minutes or until shrimp are pink. Serve with lots of napkins!
